I saw a recipe for these cookies & knew instantly that I had to make them! Plus, the recipe is simple and calls for standard pantry ingredients. I whipped up a batch one night, and promptly went on to inhale a few – these pumpkin chocolate chip oatmeal cookies are SO delicious!

Pumpkin Chocolate Chip Oatmeal Cookies

Ingredients
1 cup sugar
1 cup brown sugar
2 cups flour
1 1/2 cups chocolate chips
2 cups rolled oats
1/2 tsp of ground cinnamon
2 tsp of pumpkin pie spice
1 TB vanilla extract
1/2 tsp salt
1 cup unsalted butter
1 tsp baking soda
1 cup pumpkin puree
1 egg
Directions
Preheat oven to 350 degrees. In a large bowl, whisk together flour, baking soda, cinnamon, pumpkin pie spice, and salt.
In a separate bowl, beat butter, sugar and brown sugar until creamed together. Next, add in pumpkin, egg and vanilla to mixture and beat to combine.
Gradually add the dry ingredients to wet ingredients and mix until incorporated. Next, stir in your oats and mix well. Then fold in the chocolate chips.
Drop cookie dough by the rounded tablespoon on to the prepared baking sheet. (Try not to eat too much of this addictive dough…)
Bake cookies for 14-15 minutes or until cookies are lightly browned. SO GOOD!
PS: This recipe makes tons of cookies (I think I had 60 or so?), so feel free to cut it in half!
