Homemade pizzas are one of my favorite things to make (and eat!), and while a good ol’ pepperoni pizza is always good, I love creative, unique pizzas with your not-so-typical toppings. Give me the fun cheeses, combination of sweet and salty, complementary-flavored drizzles and glazes, and non-marinara bases. My dad likes to tease me and claim that the pizzas I enjoy are not actually pizza!
I LOVE Camille Styles and her new Entertaining book, and this is one of many recipes I’ve already devoured from her new book. There really isn’t much better than the salty and sweet flavor combination on this prosciutto & caramelized onion pizza, and it was a huge hit. As with all recipes I prefer, it was simple, makes great leftovers, was unique, and was absolutely delicious! Give it a try, for sure.
Prosciutto & Caramelized Onion Pizza
adapted from Camille Styles
Makes 4 individual naan pizzas
• individual sized garlic naan (best from Trader Joe’s)
• 1 white onion, thinly sliced
• 1 tablespoon minced fresh thyme
• 1 teaspoon sugar
• 1 cup thinly sliced fresh mozzarella
• 8 very thin slices prosciutto
• 2 cups baby arugula (not pictured here)
• crushed red pepper, to taste
Preheat the oven to 400 degrees. To caramelize the onion, add the sliced onion and sauté until just tender, about 6 minutes. Add the thyme, reduce the heat to medium-low, and cook until the onion is golden, stirring often, about 20 minutes. Sprinkle the sugar over the onion and sauté 20 more minutes, until the onion is golden brown, reduced, and very sweet.
Once the onion is finished, place the frozen naan in the oven for about three minutes, and gather all your toppings (onion, mozzarella, prosciutto, and arugula). Once the naan is very slightly cooked, pull it out of the oven and top it with the mozzarella, crushed red pepper, and caramelized onion. Place it back in the oven til the cheese is melted. Pull it out, add the prosciutto, and bake it for 1-2 more minutes. Finally, top the pizza with the prosciutto and arugula. Cut into wedges and serve. Enjoy!
Since the naan is frozen and the four pieces make four individual servings, you can make all four at once or make a fresh pizza each time. The leftovers are great, and I loved mine for lunches at work!
