Recipes: Eclairs & Fruit Pizza

I’m excited to share two of my very favorite (and very easy!) summertime desserts, both longtime favorites from my childhood! Both eclairs and fruit pizza have been a summer staple in my family for longer than I remember, and I’ve already made both a few times over the last couple weeks. They’re such huge hits with our friends and our family, and both eclairs and fruit pizza (Midwestern favorites, I believe!) are such nostalgic, fun, delicious, and easy treats — kids love these, adults love these, and they’re always inhaled very quickly!

ECLAIRS

Layer graham crackers on the bottom of a 9×13 pan. Mix 2 cups of milk, 1 large box of vanilla pudding mix, and 1 container of cool whip together, then spread the pudding mix over the graham crackers. Add another layer of graham crackers on top of the pudding mix, and then spread 1 container of chocolate icing on top. Refrigerate for at least 2 hours, then serve & enjoy!

FRUIT PIZZA

Use one roll of Pillsbury sugar cookie dough, and press the dough onto a lightly greased cookie sheet. Bake at 350 for 10-12 minutes, and then let it cool completely. For the icing, cream together 8oz (one block) of softened cream cheese and 1/2 cup of powdered sugar. Spread it on the cooled cookie, much like you would a pizza. Slice any fruit (strawberries, blackberries, blueberries, kiwis, and peaches are all favorites!) and arrange it on your pizza. Honestly, I always think the most fun part is decorating your fruit pizza in a fun pattern – that was always the point, as a child! (Fruit pizza is perfect for a patriotic 4th of July!)
